Friday Pie-Day {Chocolate Chip}

Cue the swelling music and fuzzy lighting.  It’s our final scene.  Friday Pie-Day has come to an end, and it’s time to share one final pastry together before we say goodbye to the Summer of Pies.  It’s a tear-jerker, isn’t it?  But don’t cry too hard.  I’ve saved a splendid pie for our final encounter that is both delicious and easy.

You can throw Chocolate Chip Pie together faster than you can preheat the oven.  And while you might think you know what to expect when you taste it, I think you’ll find yourself pleasantly surprised while simultaneously having your expectations met.  Chocolate Chip Pie is very friendly.

Chocolate Chip Pie is not just cookie dough baked in a pie shell.  It has the flavor of chocolate chip cookies, but the texture is different.  The top bakes into a crisp crust and the filling bakes into a gooey chocolate layer and a thin cakey layer.  If you’re looking for a great pie to bake up on a moment’s notice, this is the one.

You probably already have everything you need to make this pie on your pantry shelf.  And if you stock frozen pie dough in your freezer, you’re set.

Start by mixing the eggs, sugars, and vanilla together in a large bowl.

Whisk in the flour and salt.

Whisk in the melted butter.

Stir in the chocolate chips and walnuts.

Pour into an unbaked pie dough and bake at 325 for 50 minutes.

Bingo!  See?  I told you this was a fast one.  Let her cool on the counter for 20 minutes before serving her with a scoop of vanilla ice cream.

Chocolate Chip Pie is simple, but not boring.  It’s easy enough for a weeknight dessert, but rich enough to serve friends who have gathered around your table for a special meal.

It’s the best of a cookie mixed with the elegance of a pie.
