
We have come to the third and final entry in my triple-header lineup of my favorite lunch bowl recipes. Today’s Salmon and Strawberry Bowl With Cucumber might be my favorite, for several reasons.
First, as much as I am willing to put in the time to roast vegetables and prepare other ingredients because I know the payoff is worth it, I do love when no actual cooking is required to deliver a delicious meal. All that is required for this bowl is to barely prep a few ingredients. Chop some cucumber, cook some salmon, slice some strawberries. Or, make it even easier (I like that about you) and purchase pre-grilled salmon. This is the meal that basically makes itself.
Second, the flavors in this bowl are to die for. Clean. Crisp. Punchy. Sweet. It all works so well together, and each bite is a delight.
Before you decide to prepare this bowl, I need you to trust me. You can pile all of the ingredients together in a bowl, and it will taste fine. But if you want it to be really next-level amazing, you must sprinkle the finished bowl with a splash of white wine vinegar. I know, I know. It sounds crazy to put vinegar on top of strawberries and salmon, but believe me. It’s going to blow your mind!

Salmon and Strawberry Bowl with Cucumber
Ingredients
- fresh baby spinach
- roasted or grilled salmon
- avocado
- chopped cucumber
- goat cheese
- sliced strawberries
- a splash of white wine vinegar
Instructions
- To assemble, fill a bowl with baby spinach.
- Top with chopped cucumbers, sliced strawberries, roasted salmon, chopped avocado, salmon, and an ample splash of white wine vinegar.
